For the past few weeks I had been so sick that I could not bake for Christmas. I was diagnosed with walking pneumonia. Though it wasn't a real pneumonia, but it brought me to a condition I had to stay on my bed for 6 days, unable to move. And for the first time I had a high fever of 36.9degC. 😩 Darn! How can this be happening to me who had always taking real good care of myself! Anyway, I am on the path to fully recovery... just having a few worse coughs here and then. 😷
So while I am in a better condition, I started baking!
I had wanted to eat the chocolate chips cookies ever since getting sick. You know, when you don't get to work, and lying all day long on your bed, you started imagining or thinking of things. Well, I think of food. And that's why, I baked them right away.
My favourite recipe is using JoyofBaking.com chocolate chips cookies recipe. I had make an alteration in the recipe by changing the butter quantity by mixing in shortening. Half butter & half shortening (meaning 113g for each butter and shortening). In addition to that, I added in a tsp of coffee emulsion.
