Iced sugar cookies

Christmas is round the corner. Time for christmas cookies.
The cookies I used is simple sugar cookies. Alternatively, you can use cookies of your choices. But refrain from melt-in-the mouth cookies, they are too fragile.


Royal icing I used requires egg white powder. The recipe is from Tinrry+.
As the recipe is in Chinese, I will do a translation here.

Ingredients for Tinrry+ Royal Icing:

  1. Egg white powder - 10g
  2. Icing sugar - 130g
  3. Drinking water - 20g
  4. Corn syrup - 5g
  5. Lemon juice - 10g

Steps:

  1. Sift egg white powder & a third of the icing sugar into a big bowl, mix well.
  2. Add in the drinking water, using the beater blade to gently mix the mixture such that the powder will not fly all over. Using the handmixer on medium speed, beat the mixer till the icing show streak of lines. Add the remaining icing sugar in two additions and continue to beat till stiff peak.
  3. Add in the corn syrup, lemon juice and beat on low speed till a 15sec consistency is achieved.
